Lemon Spaghetti

This light and fresh pasta dish can be made in minutes, and is loaded with powerful flavours of simple ingredients, that are readily available in any kitchen. This is a perfect combination of a healthy and easy to make recipe.

Ingredients Required

1 packet of spaghetti
Zest of 2 lemons
Juice of 2 lemons
A bunch of fresh basil leaves, chopped
¾ cup of extra virgin olive oil
Parmesan cheese, grated about a cup
Salt as per taste
Freshly milled pepper

Method and Preparation

Mix together the grated cheese, salt and pepper seasoning, followed by the lemon juice and olive oil and keep aside. (This mix can be made a day before and stored in the refrigerator). Cook the pasta as per the instructions on the packet, drain and leave aside to cool, keep aside one cup of the water in which the pasta was cooked.

Once the pasta is cool, mix it with the sauce, add the lemon zest and basil leaves and some of the cooking liquid, if required. Garnish with some fresh basil and cheese and serve.This recipe serves up to 4 persons and takes about half an hour to make.

Macaroni And Cheese Cupcakes

Macaroni and cheese is a dish which is probably cooked in every household and relished by everyone, and is termed as soul food by many. This version of Mac and Cheese cupcakes is equally tempting, healthy and a dish that can he savoured by all.

Ingredients Required

Extra virgin olive oil
1 packet of macaroni
2 cups of broccoli cut into small florets and blanched
2 cups Parmesan cheese, grated
400 grams of asparagus, finely chopped and blanched
2 cups breadcrumbs
200 grams of chicken mince or turkey(optional in case cooking a vegetarian meal)
Salt as per taste
Freshly milled black pepper as per taste
1 cup cheddar cheese, grated
1 cup of cherry tomatoes,

Method and Preparation

Cook the macaroni as per the directions given on the packet and leave aside to cool. Preheat the oven to 375 degrees F. Grease about 10 to 12 muffin moulds and coat with the breadcrumbs. Heat the olive oil in a pan, add the seasoning and sauté until the meat is cooked through.

Add the macaroni to the meat along with the cheese and the vegetables, season as per taste and spoon into the moulds, sprinkle with some breadcrumb and olive oil and bake for about 20 minutes. This dish takes about half an hour to 45 minutes to make and serves up to 4 to 5 people.
