Apricot French Toast

Apricots , halved and stoned -6 Butter – 50g Caramel sauce -200g/8oz Ready-made vanilla custard – 350g Thick slices brioche or white bread (cut diagonally) – 4 large slices


In a frying pan, pour 1 tablespoon of butter and fry apricots in it, changing sides when it is brown in color. This will take about a minute for apricots to be done. To this, add caramelized sugar and coat the apricots well. If the mixture is too thick, you may adjust the consistency by adding a bit if warm water. Lower the flame and keep it covered for sometime. In a small bowl, mix custard powder and four tablespoons of water and make a thick paste. To this add the sliced bread pieces and keep it dipped until it is coated well. In another frying pan, fry the bread pieces until it is golden in color. Repeat the same procedure with all the four slices of bread and serve it in a plate. Turn off the flame of the caramelized mix and pour it over the fried bread slices.

Chicken Confit With French Beans Chicken Herb Juice

Garlic cloves – 5 French beans – 300g Chicken legs – 4 Shallots (finely chopped) – 2 Dry white wine – 100ml Dried thyme – pinch Parsley , finely chopped – small bunch Coarse sea salt -2 tsp Plum tomatoes , skinned – 3 Good-quality chicken stock – 400ml Olive oil – 1 litre Bay leaves – 2 Peppercorns – 4


At first, you have to marinate the chicken. For this, grind finely: thyme and peppercorns in your pestle and mortar and rub it well on the chicken to be cooked. On the side of each leg, place a clove of garlic along with a bay leaf. Transfer the chicken to a non-metallic container and keep it overnight so that the flavors gets added on well to the chicken. Heat the oven to 150C/fan. Wash the chicken leg thoroughly in cold water and dry it using a kitchen paper. Using a brush spread olive oil on the chicken on its sides and place it in the roasting tin. Cook the chicken in the oven for about 2 hours. Remove when done and keep it outside to chill.

Refrigerate the chicken while its juice is ready. To make the juice, add wine and shallots to a saucepan and stir until the shallots soften. By this time, the wine will start evaporating and at this point of time, add the chicken stock. Stir until the quantity of the sauce is reduced to half and then add in the herbs. In the meantime, cook beans in a separate bowl with a pinch of salt added to the water. Remove when cooked and keep it aside. In another pan fry a clove of garlic and to this add the cooked beans. Keep it on the flame until the beans are hot and the flavor of garlic gets added on well to it. Take two or three teaspoon of beans and place it on the plate. Place the chicken and its juices at the side.

Delicious French Omelette

Bread Crumbs: 2 bread crumbs Pepper: as required


Eggs – 3 Finely, freshly grated Parmesan – 1 tsp Unsalted butter -2 tsp


Take a saucepan and keep it on medium flame until the pan is hot. In a bowl, break the eggs and beat it using a fork or a egg beater. But, be careful not to beat it completely as you would do for making scrambled eggs. To this add pepper, Parmesan cheese and some salt. When the pan is hot, put two teaspoon of butter in it and melt it. Spread butter evenly in the pan but should not be burnt. To this, add the egg mixture and wait for it to boil. Using a fork slowly gather the end of the omelette so that it does not break while taking it out. The mixture is cooked properly when the mixture slides through the pan easily. Using a wooden fork, remove the omelette carefully from the pan and place it on the serving plate. Immediately fold it in half to give it a neat finish in the end.
