Grilled VegetableThe beginning of July means that we have entered barbecue season! Everyone is bringing out the grill, loading the coolers with ice, and inviting friends and family for an afternoon of grilling and lawn games.

If you are trying to use the summer as a time to lose weight, or keep the weight gain at bay, these gatherings can be a challenge! Mayonnaise-based salads, burgers, cupcakes, brownies, beer, and soda are all pretty standard cook-out fare. This doesn’t offer much to anyone trying to make healthier and lower-calorie choices. This July, you could shake things up and show up to your next barbecue with fresh vegetables ready to hit the grill. Here’s a list of some of our favorite grilling vegetables:

  • Cauliflower (cauliflower steaks!)
  • Eggplant
  • Corn on the Cob
  • Portabello Mushrooms
  • Asparagus
  • Squash
  • Sweet Potatoes

Vegetables are great on the grill, but how about something sweeter? There are a lot of fruits that make for great grilling. Peaches, plums, pineapple, and watermelon are great, but you can also make a skewer with apples, figs, and strawberries. The heat changes the flavor and texture of the fruit making for a very unique side-dish or even dessert.
