750g butter squash
¼ cup butter
1 small onion
200g Parmesan cheese
1 tablespoon olive oil

Break open an egg and place it in a large bowl. Beat the egg lightly with a fork until frothy. Add the refined flour and one-fourth teaspoon of salt to the egg and combine well until it forms dough. You can add a few tablespoons of water, if necessary. Knead the dough for a few minutes. Alternatively, you can use a food processor to obtain smooth dough. Wrap the dough in a plastic wrap and allow it to stand for at least half an hour. Divide the dough into four equal portions.On a well-floured surface, roll one portion of the dough into a large square about 12 inches in length and 1/4 inch thick. Cut the dough into 2-inch strips. In a small bowl, beat an egg until light and frothy. Add a tablespoon of water to the egg and combine well. Place the filling in a 2-inch strip leaving half an inch gap around the edges.Place a second strip of dough over the filling. Moisten the edges of the strips with water and use your fingers to stick them together. Repeat the same procedure with the remaining dough and filling. You can also use ravioli frames to shape the pasta.To cook the ravioli, bring a large casserole or pot of salted water to a boil. Add the ravioli in batches to the pot and cook them for 5-6 minutes. Stir the pot with a ladle to prevent the ravioli from sticking to each other or reaching the bottom of the vessel.Once cooked, remove the ravioli from the pot and place them on a plate. This recipe makes 30 homemade ravioli. You can add grated cheese to the egg filling to obtain the cheese filled ravioli. To enhance the flavor of ravioli, a variety of herbs can be added to the dough.

For The Roasted Butternut Squash
Peel and dice the butternut squash into half inch thick cubes. Preheat an oven to 240 degrees C. Coat the squash cubes with one tablespoon of olive oil. Arrange the diced squash on a greased baking dish and place it in the preheated oven.
Roast the squash for 30 minutes or until they turn light brown on the edges and sides. Do not forget to toss the squash once or twice to ensure even cooking. When the squash becomes tender, remove it from the oven and keep it aside.
While the squash gets roasted, chop the onion finely and grate the cheese. Place a small sauce pan over a medium flame and add butter to it. When the butter melts, add the onion and sauté for a few minutes. When the butter turn light brown in colour and onion becomes crisp, add salt to the pan. Remove the pan from heat.
Assemble The Ravioli With Roasted Butternut Squash
Arrange 5-6 ravioli in each plate and scoop a few tablespoons of roasted butternut squash on top. Garnish the ravioli with butter onions. Sprinkle liberal amounts of Parmesan cheese over the top. Season the dish with salt and pepper.
