Cauliflower Soup With Croutons


This soup can be made with minimal and simple ingredients that can be readily found in every kitchen. This healthy and nutritious soup serves as a perfect and appetizing start to any meal.

Ingredients Required

For the soup
50 grams butter
1 shallot, finely chopped
1 cauliflower head, cut into florets
4 cups Vegetable stalk
Salt as per taste
Freshly milled pepper
2 celery stalks, finely chopped
2 cloves of garlic, minced
Mixed herb seasoning
Fresh Parsley for garnishing

For The Croutons

8 slices of whole wheat bread, cut into half
Olive oil
Mixed Herb seasoning
Salt and pepper

Method And Preparation

Melt the butter in a pan and add the shallots, saute for a minute and add in the garlic followed by the salt and pepper seasoning and celery. Saute for a few minutes.

Add the cauliflower florets, herbs and the broth and bring to a boil over medium heat. Once the broth comes to a boil simmer for about 15 minutes and set aside to cool, before puréeing it in the food processor. Once done, leave to chill in the fridge.

For The Croutons

Place the bread slices on a baking tray. Drizzle with olive oil and the seasoning and bake in a pre-heated oven at 400 degrees F for 10 minutes.

To serve, season the soup as per taste, spoon into soup bowls, garnish with fresh parsley and serve chilled along with the croutons. This recipe takes about 45 minutes to make and serves up to 4 persons.

French Toast With Blueberries

Ingredients Required

6 eggs
2 cups blueberries
4 slices of sourdough bread, made into cubes
3 to 4 cups of full fat milk
3 tablespoons cinnamon powder
Zest of one lemon
3 tablespoons caster sugar or regular sugar
1 cup maple syrup
A pinch of salt

Method And Preparation

Pre-heat the oven to 300 degrees F. In a bowl mix together the sugar and a tablespoon of cinnamon powder and keep aside. Beat the eggs until fluffy, to this add the milk, the remaining 2 tablespoons cinnamon, lemon zest and salt and mix well.

Combine the bread cubes and the blueberries with the mix and spoon the concoction into a greased baking dish, sprinkle with the sugar and cinnamon mix prepared previously and bake for about half an hour to 40 minutes.

To serve, drizzle with some honey or maple syrup and serve hot.This recipe takes about an hour to make and serves 4 persons.
