Creamy Shrimp and Penne Pasta

250g penne pasta
100g cremini mushrooms
2 stalks asparagus
1 small broccoli
½ cup peas
4 cherry tomatoes
2 garlic cloves
300g Parmesan cheese
1 bunch parsley
4 tbsp olive oil

Cut mushrooms into thin slices and cut the cherry tomatoes into halves. Remove the stalks and finely chop the parsley leaves. Cut the carrot into one-inch long pieces and slice the scallions. Cut the broccoli into small florets and mince the garlic cloves. Separate the tips from the asparagus and slice the stalks into thin strips.
Peel, devein and wash the shrimp. Place a large skillet over medium heat and add 2 tablespoons of olive oil to it. When the oil is heated, add the minced garlic cloves and sauté for a few minutes until fragrant. Add the carrot pieces to the skillet and sauté for 3-5 minutes.

Toss in the mushrooms slices and sauté for 2 minutes. Add the asparagus tips, cherry tomatoes and scallions to the skillet and stir-fry for a minute or two. Next add fresh peas followed by asparagus stalks to the skillet.
Add the shrimp to the skillet and cook for 6-7 minutes or until the shrimp turns light pink and starts to curl. Add salt and pepper to the skillet. Stir the contents of the pan and combine well. Cook for another minute and remove the skillet from heat. Next prepare to cook the pasta. Add 8 cups of water to a large pot and add 2 teaspoons of salt to it.
Bring the water to a rolling boil and add penne pasta to it. Cook the pasta for 10 minutes while stirring the pot intermittently to prevent the pasta from sticking to each other. When the cooked pasta is tender yet firm remove the pot from the stove.
Place a colander on a kitchen sink and drain the pasta into it. Reserve half a cup of cooking water for later use. Shake the colander to remove excess water. Transfer the pasta to a bowl and coat it with olive oil. Bring the skillet containing shrimp and vegetables back to the stove and add the cooked pasta to it.
Add the reserved cooking water to the skillet and combine thoroughly. Grate the Parmesan cheese over the top and combine well. Adjust the seasoning and cook the pasta for another 5 minutes. Alternatively, you can add the grated cheese after removing the pasta from the stove.
When the sauce becomes thick and creamy, add chopped parsley to it. Remove the skillet from the heat and transfer the pasta to a serving bowl. Dribble the remaining olive oil over the shrimp and pasta and serve it with herb bread.
